GF Sloppy Joes

Oh my goodness, you guys! After months of inconsistency and trying something new literally every week, we locked in our Thursday dinner and I couldn’t be more excited to share it with you. CLEAN SLOPPY JOES! These are not your mama’s sugar loaded cheat meal. These are 100% clean, yummy, meal plan approved and perfect for dinner, leftover lunch or whenever else you would like them! Also, they are another versatile meal that can be served on a bun (original fan favorite for Adam) or quinoa, sweet potato, rice, pasta, etc. for a healthier option. I chose quinoa tonight and I am still feeling separation anxiety from my last bite.

Ok, so here’s the easy recipe:

1 tsp olive oil or nonstick spray

1 lb of lean ground beef (I use extra lean)

1 medium red pepper

1 medium white onion

1 tbsp Worcestershire sauce

1 cup tomato sauce (no sugar added)

2 tbsp maple syrup (your choice)

In a pan, heat 1 tsp of olive oil or cooking spray. Chop up an onion, a few cloves of garlic and one red pepper (big chunks are a-okay!) Add these to your pan and cook on medium heat until they are soft. Add this mixture to a food processor. I like to use the baby Ninja. In the same pan keep your medium heat going and add your lean ground beef. Cook until brown and then pulse your Ninja a few times to get your veggies into smaller chunks. Add back to your meat and pour in your tomato sauce, Worcestershire sauce and maple syrup. If you’re like me, you’ll probably need more salt. Trust me. Try it and then thank me after you’ve ground a few teaspoons worth of Himalayan pink in your pan. Let the mixture cook and thicken on low for about 3-5 minutes and you’re all set.

As I said, you can pour this over literally anything or you can keep it business as usual and use a bun. Your choice. Guys, this recipe is legit. Go get sloppy!
